
New week, new discoveries at my local farmers market.
This past Sunday found me gawking at what looked like an albino cucumber. When I asked the farmer what it was, he informed me authoritatively, “silver slicer cucumbers. They taste exactly like regular cucumbers but are, perhaps, a bit crisper.”
Ever eager to try new, local produce, I bought a few and set about making a salad to showcase them. The results were good — simple and straightforward, highlighting the ingredients rather than the preparation. If you can’t find silver slicers, fear not; regular green cukes will do just fine in this salad.
Here’s what I did:
Silver Slicer Summer Salad
Serves two to four
2 cucumbers, peeled and sliced
1 small handful fresh parsley, coarsely chopped (about ¼ cup)
Juice of 1 lime
1 tablespoon olive oil
¼ teaspoon salt
Generous sprinkling of black pepper
Toss all the ingredients together in a medium-sized bowl and let it sit for a few minutes — or a few hours.
