This drink is a delicious, refreshing and simple way to cool off on a hot day. It’s also a great way to use surplus watermelon.

And if it’s after 5 p.m. and you are inclined to happy hour, it lends itself well to a spike of tequila or vodka. Watermelon is extremely hydrating so it’s a good thing to mix with alcohol to avoid a dehydrating headache.

Because watermelon tends to be sweet, I like to balance the drink off with a zing of jalapeno and a handful of mint, but these can be omitted if they do not appeal to your crowd.

Watermelon Cooler
Makes about 2 quarts

6 cups watermelon (cut in large chunks)
1 to 2 cups cold water
½ a jalapeño pepper (about 1-inch piece)
10 fresh mint leaves
1 cup tequila or vodka, if desired

In a blender, puree the watermelon with the pepper and the mint. Add water gradually until your desired consistency is achieved. Serve it over ice with a sprig of mint.

Cook’s notes: If you are adding tequila or vodka, use less water. If you prefer a thinner texture without pulp, you can strain the juice.
