To treat Dad royally this June 16, put a lawn chair in a shady spot and the newspaper on a table nearby.
Serve him a tall glass of his favorite cold drink. While he enjoys a peaceful morning in the great outdoors, start preparing a brunch fit for a king.
When the food is ready, the kids can unroll a red carpet in front of Dad's chair and lead it to a decorated picnic table. Use a long roll of red crêpe paper, red towels or a red paper tablecloth.
To complete the day, the kids can present Dad with homemade coins that offer him all the riches in his kingdom: a shoe shine, a back rub, a mowed lawn, a car wash or a clean garage. Or just take him out to the old ballgame!
Cheese Wedge Biscuits
2 cups flour
1 Tbsp. baking powder
1/4 tsp. salt
5 Tbsps. butter
2/3 cup milk
1/2 cup cheddar cheese, shredded
Preheat the oven to 425 degrees.
Combine the flour, baking powder and salt in the bowl of a food processor or electric mixer.
Add the butter in chunks, and blend until the mixture resembles a coarse meal.
Add the milk and mix until just combined.
Turn dough out onto a lightly floured surface, and pat into a round shape, about one-third-inch thick.
Place the round in a 9-inch pie plate and cut into wedges.
Cover with shredded cheese and bake for 15 minutes, or until lightly toasted on the top.
If the cheese hasn't browned, broil for one minute.
3 Tbsps. chopped green pepper
3 Tbsps. chopped onion
1 clove garlic, minced
1 can (8 oz.) tomato sauce
1/2 tsp. Worcestershire sauce
1 tsp. butter
salt and pepper
In a small saucepan, cook green pepper, onion and garlic in 1 teaspoon butter until tender.
Stir in tomato sauce and Worcestershire sauce.
Bring to a boil, lower heat and simmer 5 minutes. This is enough to fill up to 4 omelets.
In a small bowl, beat the eggs with 2 tablespoons water, salt and pepper. Melt 1 teaspoon butter in a 7-inch omelet pan and, when it is hot, pour in the egg mixture.
Carefully push cooked portions at edges to the center, so uncooked portions can reach the hot pan surface, tilting pan as necessary.
When top is thickened and no visible liquid egg remains, spoon some of sauce across the center.
Fold over sauce and invert onto a plate.
Makes 1 omelet.
2 cups milk
3 Tbsps. maple syrup
1 scoop vanilla ice-cream per drink
Combine the milk, maple syrup and ice cream. Put in blender and blend until frothy.
