nonstick cooking spray with flour
1 cup all-purpose flour
1 cup sugar
1 tsp. baking powder
1/4 tsp. salt
2/3 cup soy milk
1 tsp. vanilla extract
1 large egg
4 Tbsps. margarine
3 Tbsps. colored nonpareils
Manischewitz Vanilla Pareve Frosting
Preheat oven to 350°.
Coat an 8-inch square baking pan with the nonstick cooking spray. In a large mixing bowl, combine the flour, sugar, baking powder and salt. Add the soy milk and the vanilla. Add the egg.
Melt the margarine in a microwave-safe bowl for 45 seconds. Allow it to cool for 5 minutes, so that it doesn't melt the nonpareils when you add them. Add the margarine to the batter. Beat for 3 minutes.
Add the nonpareils, and beat just until combined and creamy.
Pour the batter into the prepared pan. Bake for 30 to 35 minutes.
After cake cools, frost with Manischewitz Vanilla Pareve Frosting, then shake on some more nonpareils.
