Turkey Soup
Ingredients:
32 oz vegetable stock
32 oz water
Two large turkey thighs
Teaspoon of Chinese five-spice mix
Chopped carrots, 4 or 5 large ones
Chopped celery (4 stalks)
One bunch of fresh green onions (chopped fine)
Packet of Szechuan Spices (about a tablespoon)
One cup of white rice
Instructions:
Set your crockpot to high.
Add the turkey thighs with NO LIQUID and sprinkle with salt and pepper.
Cook the turkey thighs until their fat runs into the bottom of the crockpot.
Now, add all the other ingredients.
Cook on high for 5 hours.
Add frozen dumplings of your preference (Chinese vegetable, chicken or other).
Let that run for another hour on high. ■
